You will need:

2lbs firm, ripe tomatoes, skinned and chopped
1 onion, peeled and chopped
1 clove garlic, peeled and chopped
1 pint beef stock
2oz butter
a pinch bicarbonate of soda
salt and black pepper
superfine sugar
1/4 pint double cream

Here’s what you need to do:

Fry onion and garlic in the butter until soft in a heavy bottomed saucepan. Next,Add half pint of the stock and add the tomatoes and bicarbonate of soda.Bring the mixture to a boil and as it does, turn down the heat. Put on the lid and leave to simmer for 15 minutes. Remove from heat and allow  it to cool a little.
Liquidize the soup. Next, rinse pan and sieve soup back into pan.Heat the soup again and add more stock until you get the consistency you like. Then, heat up cream in separate saucepan to near boiling point.
Add cream to soup and season to taste, adding sugar if required.
